Banana Eggy Pancake


Banana Eggy Pancakes
1 banana + 1 egg = Happiness

So, like any warm-blooded person, I love pancakes once in a while. But since we're trying to eat healthier it doesn't seem like a viable option right now. Though I've definitely had some impressive cheat days these past few weeks with Easter, my father's, my brother's and a friend's birthday. I'll be posting recipes that I've made for those occasions soon as well. :) But I haven't had pancakes in a good long while now and I had a craving. Thus came in this awesome fake banana pancake. I've made these before when I had leftover very ripe bananas and didn't feel like a smoothie, but they're surprisingly healthy. It's just an egg, a mashed up (ripe) banana and optionally a little honey or other sweetener, and no it doesn't taste exactly like a pancake of course. It is after all just a banana-y omelet, but it settles my cravings and might do the same for you!

Breakfast/Lunch/Snack - 1 'pancake' - 200cal - 10min

(9g fat; 25g carbs and 7g protein)

Note: Sometimes while trying to flip mine break apart and fail to become pancake shaped, but who cares! It'll still be delicious scrambled banana eggs. We're just going for caramelisation of that banana/honey here people. That works in every shape. That being said I do still prefer the pancake like structure. ;)

Ingredients

 - 1 Banana: very ripe, as in lots of brown spots, works best and that way you don't really need the honey/sweetener, though it still makes it slightly better.
- 1 Egg: If your banana is large and your eggs small you might need 2.
- 1 tsp Cooking oil/butter: preferably something neutral
- 1 tsp Optional: Honey (1tsp) / Sweetener (less probably)

Instructions

- Mash your banana(s) very well with a fork. If you don't mind the extra dishes you can use a potato masher or ever a mixer if you're making a big batch of these.
- Add in your egg(s) and mix well.
- Optional: Add in a teaspoon of honey or some other sweetener, you probably need less with a sweetener. I like using honey because it helps the caramelisation process, but it does still happen with just the banana, so you can use sweetener instead.
- Take a small pan and spray/coat it with your neutral oil/butter, put it on a medium fire.
- Pour in the mixture and let it bake for about 5min. You'll see the edges turning slightly brown (caramelisation). Work loose the edges with a big (preferably round) spatula, work your spatula under there and flip it. Let it cook for another 2min or so. Flipping is probably the hardest part here. I'm thinking it's probably easier if you're mixture is slightly eggier, but I'm not sure. I'll report back once I've uncovered the secret as to why it sometimes fails to flip (like 1/4 times, made it about 10 times now).
